300g bread flour, 200g water, 6g salt, 80g active starter
Autolyse 1hr. Add salt + starter, stretch and fold x4 over 2hrs. Bulk ferment overnight. Shape, proof 4hrs. Bake 180C covered 20min, uncovered 15min.
